Lemon Poppy Seed Bundt Cake

I had decided to nail this beauty last spring, but it did not work out that well. Then I did my research and finally this spring I got what I wanted. And it took me summer to blog this recipe. Sometimes I seriously wonder, do I run out of time or am I just getting more and more lazy by the day! Time to work on my time management now.

This recipe is inspired from my favorite — Dorie Greenspan, with a few modifications. I did not make any icing or frosting for this cake as the beauty of this cake lies in its citric flavor and I did not want to ruin that with the sweetness of sugar. Hence, this will pair best with your evening cup of coffee or tea. That fresh citric flavor and lemony smell will keep you refreshed for the rest of the day. Read More

Vegan Banana Muffins

It’s a fact that I love baking but at the same time I can’t eat every single bit of it. We are taught sharing is caring since we were in kindergarten. So obviously I share all my preparations with friends and family. Another universal fact is, we all have that one friend in our group who keeps counting calories and fats in everything. So, this recipe is dedicated to that friend of mine who always asks the quantity of butter and sugar first before tasting the delicious food offered, because this recipe does not have any sugar and butter. Yes, you read that right! These delicious banana muffins which are topped with dark chocolate chips are a treat for your diet freak friend. Read More

Orange Cardamom Cake

As I announced in my last blog post, it’s my day today to open the virtual door of advent calendar. I hope you have enjoyed all 15 recipes already, if not then do check here . I have chosen to make a wonderful dessert with the use of cardamom, one of the most expensive spices in the world. Being an Indian, we have a variety of dishes for three meal course that have cardamom in it. We even add it to our tea and coffee. It’s strong aroma will make you crave for more, and it also has many health benefits. While making this dessert, I have used two strong flavors, orange and cardamom. If balanced well, the output will make a wonderful aromatic delicacy. Considering the big fussy and heavy holiday meals, I have kept this dessert a bit light weight. That is instead of decorating it with heavy whipping cream or cheese cream frosting, I have simply soaked it in few spoonfuls of saffron milk. Read More

Banana Choco Chips Bread

It’s been a long time that I have blogged. My busy schedule kept me so busy that I neither got an opportunity to experiment nor to blog any recipe. Yesterday, when I got some free time, I realized that I still have not blogged one of my and my family’s favorite bakery items, Banana choco chips bread. And I guess, it’s been months that I have not baked it. So when I came from my New York trip a couple days ago, I found all the three bananas that I left for my husband for breakfast untouched. He didn’t eat them, hoping they will ripen by the time I come home and my concern of not wasting food will make me bake a bread for him. Smart move man!

And yeah, his plan worked, I baked it yesterday and I am blogging it today. We eat this bread most of the time for breakfast as well as during tea time. Since, it does not have butter & loads of sugar, factors like saturated fats or blood sugar level absolutely don’t bother me. Yeah, you read that right, its butter free and sugar free. Read More

Choco Jaggery Cake

Avoiding something doesn’t always mean that you hate it; it could also mean that you want it but you know it just isn’t right. This absolutely suits my relationship with sugar. The more I eat it, the more acne my face gets. Trying to go sugar free with the help of honey since last few months. Somehow I have succeeded in it, but this sudden craving for chocolate cake was killing me. I was absolutely not ready to break my diet for this small craving. My husband decided to get a small piece of cake from the bakery, but how can the bakery know what and how I want! So, I decide to do an experiment. I simply replaced sugar with powdered jaggery (concentrated cane sugar). It is not as processed as sugar, hence it works perfect for my skin. I had my taste buds satisfied without failing my diet. Kinda win-win situation, isn’t it! Read More

Dulce De Leche Brownie (Eggless)

I never had a “thing” for brownie. Before this recipe happened, if anybody would have given me options for dessert, I would have kept brownie as my last option. I never liked it because of its chewy texture, and even if I had it, I always combined it with vanilla ice cream to sooth that chewy pain. The same thing goes for Dulce de Leche. I never liked its sticky texture so I left eating Cadbury’s Five star chocolate bar in my childhood.

I still don’t know what made me experiment brownies so many times. I even don’t know what I was experimenting exactly, whether to find what makes it chewy or to make it less chewy. But a sweet accident happened and I ended up making cake-like brownie with soft texture and slightly fluffy interior instead of dense chewy brownie.
