I have chosen to make a wonderful dessert with the use of cardamom, one of the most expensive spices in the world. Being an Indian, we have a variety of dishes for three meal course that have cardamom in it. We even add it to our tea and coffee. It’s strong aroma will make you crave for more, and it also has many health benefits. While making this dessert, I have used two strong flavors, orange and cardamom. Avoiding something doesn’t always mean that you hate it; it could also mean that you want it but you know it just isn’t right. This absolutely suits my relationship with sugar. The more I eat it, the more acne my face gets. Trying to go sugar free with the help of honey since last few months. Somehow I have succeeded in it, but this sudden craving for chocolate cake was killing me. I was absolutely not ready to break my diet for this small craving. My husband decided to get a small piece of cake from the bakery, but how can the bakery know what and how I want! So, I decide to do an experiment. I simply replaced sugar with powdered jaggery (concentrated cane sugar). It is not as processed as sugar, hence it works perfect for my skin. I had my taste buds satisfied without failing my diet. I have this one habit since childhood, rather since the time I learned to read. Whenever my dad (baba) used to bring the new year’s calendar in advance, the very first thing I used to check were the dates for Ganesh Chaturthi & Diwali. Now, since the world is changing so fast, we really don’t have to wait for a printed calendar, we just have to update our Kaalnirnay app. But my habit has remained the same. Once I update my app, I still rush to check for the months from August to November. Growing up in the region of Maharashtra, I have worshipped bappa like no other god. Yeah… I have always been a little partial and biased towards Bappa. Hahaha… jokes apart, this case does not limit to just me, Bappa is the most favorite god of Maharashtra. His arrival is the biggest celebration in Maharashtra. Almost every home welcomes Bappa and offers him his most favorite food. Yeah, we are talking about his most favorite food here, ukadiche modak.
I never had a “thing” for brownie. Before this recipe happened, if anybody would have given me options for dessert, I would have kept brownie as my last option. I never liked it because of its chewy texture, and even if I had it, I always combined it with vanilla ice cream to sooth that chewy pain. The same thing goes for Dulce de Leche. I never liked its sticky texture so I left eating Cadbury’s Five star chocolate bar in my childhood.
I still don’t know what made me experiment brownies so many times. I even don’t know what I was experimenting exactly, whether to find what makes it chewy or to make it less chewy. But a sweet accident happened and I ended up making cake-like brownie with soft texture and slightly fluffy interior instead of dense chewy brownie.
I never liked this healthy dessert during my childhood when my grandma used to prepare it for us. But now far from home, when nobody is forcing me to eat those dishes I disliked, I am really not sure if I am reminded of my people forcing me to eat those dishes or those dishes that were forced on me by my people. I guess, I am missing them both, those dishes and my people.
