Banana Blueberry Muffins

I had a very bad start of morning. The first thing I check in the morning is my home garden. Last week, I planted few seeds of sunflower and zinnia flowers, which were seedlings, and I was so happy seeing their rapid growth. But today morning, it was a disaster. Birds that wake up before humans, they found their morning treat in my sprouts and destroyed my garden. I was very upset but somehow I maintained the remains and planted new seeds. Starting from zero again. Nothing was uplifting my mood. But baking is my stress buster, mood uplifter, everything. It gives me immense pleasure to see that something is rising from flowing batter. So, I decided to prepare banana blueberry muffins today. And to choose this combination, another reason is banana offers serious mood up-lifting power, with their combination of vitamins, fiber, potassium, phosphorous, iron, protein and healthy carbohydrates. Best reason to categorize these muffins as breakfast. Read More

Rava Dosa with Sambar & Coconut Chutney

The beauty of this dish is we can have it for breakfast or lunch or even as a snack. Also, it is very quick and easy to prepare, healthy to eat. No wonder, it becomes a street food in Mumbai in no time. Basically Dosa originates from Southern part of India, but gradually people have developed variety in this dish to satisfy their taste buds. Being a Marathi mulagi from Maharashtra, I know how to make bhakari, ghavana etc but had little idea about preparation of dosa, idli and its fermentation process. So instead of doing extreme experiments in this dish, I simply chose to prepare it by taking reference from another blogger, who makes it very simple to understand by demonstrating images step wise. Beetroot Cupcake

I have come across many people who are fascinated by Red Velvet Cupcake and that include my husband and me too. But when I thought about it neutrally, what is it in that cake exactly that fascinates us? Does it taste different in better way? Does it have a different texture unlike other cupcakes? No, it’s definitely not. It’s the color that fascinates us. And again it’s the color, which gives illusion of velvety texture.

If color is the only apt thing then I thought why not use color which is blessed by nature. Beetroot cupcake does not give the exact red velvet feeling. Yeah, but it has its own unique color and definitely nutritive value. Read More

Orange-Blueberry Muffins

Today, I have tried another recipe from the book “Baking – from my home to yours” by Dorie Greenspan.

It is basically breakfast muffins. I personally suggest to have it for breakfast on a Monday. Many of us suffer from so called “Monday Blues” almost every Monday. Antioxidants from blueberries and the tangy taste of orange early in the morning will make your Mondays happening. The aroma of baking orange zest will turn your Monday blues in to oranges, very vibrant, enthusiastic with a subtle hint of freshness. Read More

Fruit Cake

Our trip to Florida left my fruits to ripen. After returning home, the first thing I realized was that my home was filled by the sweet smell of over ripened fruits. Though it was a temporary fragrance, that day was not far when that fragrance would turn into rotten smell. So I had to take some measures to avoid that. Throwing them away in trash was absolutely not the one. Smoothies and milkshakes were definitely not good options.

And here again, the amateur baker within me came up with an idea. Read More

Choco Chip Cookies

“A balanced diet is a cookie in each hand.”

If you are an amateur baker, cookies are best to start with. Except for measurements there are no more skills required. The reason I chose “cookies” to start my blog with is because they are a daily snack. It’s not always like we eat because we are hungry. Sometimes we eat just because we feel like eating something or maybe we are bored or maybe we are sad or anything. A cookie is one of the best things to have in such situations.

This is my first experiment with cookies and I chose this recipe from the book “Baking – from my home to yours” by Dorie Greenspan. Read More
